Sure you can. The main thing they are for is to reduce the amount of chlorides that enter the environment. So if that is inportant to you by all means keep using potassium. It has no bearing on the water softener itself.
They both actually do the same job at softening your water. You can mix and match any combo of salt of potassium as long as they for water softeners. Their is no difference in taste either it is simply a environmental choice.
