If you are not going to use the ice maker or water then no you do not havr to hook it up.If you are going to use these items then yes you will have to have it plumbed in..
If you don’t want ice, don’t connect it
It doesn’t need a water connection if you don’t want ice; most fridges have a wire thingy which senses the amount of ice made to prevent an overflow of ice. This thingy usually can be raised to to an upper fixed position to signal the ice maker to stop its work.
How about snaking a 1/4 " copper water line to it over and around obstacles. Nothing beats freshly made ice that’s always available. Kits are usually available from plumbing supply shops for ice maker installation.
If you are not going to use the water features, you do not need to connect it. Supply kits are available and are usually plastic tubing that is easily run.
One comes with the other. Once you connect the water line, you will be able to have both ice, and ice water.
