Would it be healthy to drink distilled water if you compensated for lack of minerals through diet?
Ive been hearing (reading) that drinking distilled water is not good for you because of the lack of nutrients and minerals. But what if you compensated for that with proper diet?

Well, in natural water you have not only H2O but all the minerals in their exacts quantities. Drinking distilled water and getting minerals apart is not the same thing because you lack the exact ratios and anyway body processes water in a different way from how processes the intake of only minerals.
